There are a lot of authors who are on my auto-buy list who write long series like Jim Butcher or Patricia Briggs. I’m not choosing any of their books because you need context to understand what is going on in them. Besides, usually my favorite is always the most recent.
So here are authors who I’ve read a lot of and my favorites (at this moment.)

It depends on what story line he wants to read. If he wants to follow the witches, start with Wyrd Sisters. If he wants to go with the police stories, go with Guards, Guards.
