One of the things that I love about a whole foods plant based diet is that is doesn’t demonize potatoes.

So many people have been scared off potatoes because of concerns about carbs. But potatoes are great in addition to being yummy. They are a source of vitamin C and lots of fiber.

The husband used to avoid them because thats what you are told to do as a diabetic. Now can eat them with no issues. Yes, it causes a temporary blood sugar spike but as insulin resistance decreases with decreased animal dietary fat, the body handles that fine.

This is my lunch for today.

It is a Russet potato cut into long wedges. I sprinkled nacho flavored nutritional yeast on the cut sides and then cooked it for 20 minutes at 400 degrees in an air fryer. Topped them with Frank’s Mild Wing Sauce (amazing!) and vegan ranch.
