This is part of my A to Z Challenge for April

I’ve been loving oatmeal lately. Is that a sign that I am getting old?

I’m not loving the instant stuff in the packets. I ate some of that recently and it was pure mush.

Speaking of mush, the husband buys some prepared overnight oats called Mush and I don’t like that either. I haven’t been able to get into the overnight oats fad at all. The texture is icky to me.

I’m loving steel cut oats cooked in my Instant Pot. Yeah, I’m an oatmeal snob.

Here’s how I’ve been making it.

I combine 1 cup of non-dairy milk, 3 cups of water, and 2 cups of steel cut oats in the Instant Pot. You can add other flavorings at this point. I’ve been adding shredded carrots. Before you say yuck, think of it as carrot cake. Carrots and grains together are yummy. You can add sweetener now if you want but I haven’t been. I’m hardcore like that.

I cook it on high for 4 minutes and then let it naturally pressure release. It makes a lot of oatmeal so it is enough for several days.

I add some more non-dairy milk and a few raisins before I eat it. Carrot cake oatmeal. Way better than the stuff in the packets.
