I got this recipe off of the Quick Vegetarian 2 email list on Yahoo. It seemed like a good thing to make on the solstice and it turned out tasty. Food purists should probably stop reading now.
Apple Yam Casserole
1 can of apple pie filling
21 oz of canned sweet potatoes, drained
3 T of butter
Combine apples and sweet potatoes in a casserole dish. Top with pats of butter. Sprinkle with nutmeg and nuts. Bake at 325 F for 30 minutes.
Oooh, that does sound yummy!!! Personally, I prefer non-canned yams, but considering I’m the only one in my family who loves (Dd tolerates them, DH hates them) yams, I’d probably used canned anyway. Just less time consuming that way. Hope you had a lovely Solstice!
